Top sirloin is a versatile and lean cut of beef that comes from the primal loin, located toward the back of the cow, just behind the short loin (where T-bone and porterhouse steaks come from). Comes 2 per pack

Brisket is seperated into the brisket flat and brisket point.  The brisket flat will be lean with less fat and point will have more fat.
